Sauces help the veggies go down …

A CSA member from the coast passed on some of her favorite sauces for dressing the veggies:

Cheese sauce for Veggies (She puts this on Cauliflower)
Mix together:

  • 1/3 cup mayonnaise or salad dressing
  • 1 tsp. prepared mustard
  • onion flakes
  • pinch salt
  • Pour over cooked veggies. The CSA member always cook the cauliflower in the microwave, as follows … Sprinkle with shredded cheese; cook in Microwave at 70% power for 1 1/2 minutes; sprinkle with paprika and serve.

    Sauce for Broccoli and Veggies (Maitre d’ Hotel Sauce)
    Melt: 1/2 c. butter or oleo
    Add:

  • 2 Tablespoons lemon juice
  • 1 tsp. salt
  • 1 Tablespoon parsley flakes
  • Dash of cayenne pepper
  • Pour over cooked veggies (especially broccoli) … Also good on broiled steak, chicken and fish.
