Preheat oven to 400°. Place whole small-medium beets in a small roasting pan (or cut large beets into smaller even-sized chunks) with ½ cup water. Cover with foil and bake until beets are easily pierced with a knife, 45 minutes to 1 hour depending on size.
Allow beets to cool slightly, then run under cold water and slip off their skins. Slice in ¼ inch rounds or slices.
Melt ¼ cup butter in a small pan over medium heat. Stir in 2 tablespoons maple syrup, some minced garlic, 1 tablespoon chopped or grated ginger (or less of powdered ginger), and 1 tablespoon soy sauce or tamari (adjust ingredients to taste and to quantity of beet slices you’ve prepared). When the ingredients are thoroughly combined, remove from heat.
Preheat broiler. Put the beets in a shallow baking pan and pour the maple syrup mixture over them. Broil, stirring occasionally, until tender, 5 to 10 minutes.
