Happy Thanksgiving!

(CSA Newsletter: Fall Week 3)

Meet this week’s vegetables:

  • Pie pumpkin — See our recipe for ‘pumpkin pie from scratch.’
  • Yukon Gold potatoes — Our favorites for making mashed potatoes!
  • Celeriac — A new Thanksgiving tradition? We think it should be!
  • Brussels sprouts — It wouldn’t be Thanksgiving without them.
  • Carrots — I think we’re all thankful for carrots this year.
  • Leeks — Add a subtle sweetness to your stuffing with leeks this year.
  • Collard greens — A soul food Thanksgiving staple.
  • Shallots — A little something extra festive for the holidays.
  • Cooking onions — Keeping you stocked with the basics.
  • Romanesco OR cauliflower — Festive fall flowers for eating.
  • Each year at this time, we here at Oakhill Organics take an evening to sit down and actually write out our thanks for the year. Listing our gratitudes has become a significant annual exercise for us, helping us remember the many blessings we received that year: including the mundane (books we loved) and the life changing (moving to Oregon).

Last year, I’m sure we thought our ‘life-changing’ quotient had pinnacled. 2007, however, continued adding significant events to the list: building our house, moving to our new land, etc. It’s been quite a year.

As we begin to consider this year’s list, one thing tops everything: the people that made this year possible. And you, our community of eaters, have been a huge part of it all. Both on an individual level with the way you offer your unique gifts so generously, but also as a whole body of overwhelming enthusiasm and support.

So, on this Thanksgiving holiday, we thank you.

May you have an absolutely wonderful holiday. Enjoy the vegetables!

    Your farmers,

    Katie & Casey Kulla

P.S. Did you know? … If every American ate just one meal a week of locally grown organic foods, we would reduce our oil consumption by 1.1 million barrels every week — or one quart of oil saved per meal per person. Thank you for doing your part!
