Nearing the end of 2008

(CSA Newsletter: Late Season Week 9)

Meet this week’s vegetables:

  • Brussels sprouts*
  • Kale* — Red Russian or curly green kale.
  • Arugula* — Is arugula too hot for you as a fresh eating green? Or, do you just want to try something different? Try chopping and lightly sauteeing arugula with garlic and olive oil. Then, toss with pasta for a delightful, light meal!
  • Carrots
  • Beets — As with the carrots, we are moving into the ‘bulk’ beet season (the greens are beginning to wilt from cold weather and are no longer suitable for bunching). But, don’t let appearances fool you! Even though these large beets resemble the bulk grocery stores, they have been freshly harvested this week and are tender, sweet, moist and delicious inside! We love using these large beets for cooking in the winter, because there’s just so much beet to work with! Definitely begin by peeling, since the outer layer is tougher than on small summer beets. Our favorite simple way to prepare beets is to cut into even-sized cubes; steam until very tender; and then marinate in a simple balsamic vinegar dressing overnight. We eat these quick pickled beets with dinner all winter long. Store refrigerated in a sealed container for many weeks. (The oil might congeal in the fridge, but it will return to normal after warming up.)
  • Delicata winter squash*
  • Yellow cooking onions*
  • Garlic

  • Well, folks — it’s kind of a note & news-filled newsletter this week. As we wind down for 2008, we have lots of important info to communicate. We’ll have more reflections next week, our final CSA pick-up for 2008! Enjoy the vegetables!

    Don’t miss out on 2009 CSA! PLEASE READ!

    Next week (December 16), is our final CSA pick-up of 2008!!!!! What a great year it has been!

    We will be taking the rest of December and all of January as a break from harvesting and the 2009 CSA season begins Tuesday, February 3.

    We will be sending you a CSA reminder letter on December 31, so WATCH YOUR MAILBOXES after the New Year for this important communication! If you haven’t heard from us by January 7 or so, CALL US at 503-474-7661. (We’ve had some problems with postal mail over the years, so please be aware of what you have or have not received.)

    Along with reminder information, you will also receive your official 2009 invoice with payment details. Your first payment for 2009 will be due by January 20.

    Not sure whether you’ve signed up for 2009??????? Contact us NOW to check in (503-474-7661). We still have room for current members to return, but we need to hear from you ASAP to hold your spot for next year!!!!!!!!!

    We will reiterate these instructions next week to make sure everyone is on board and ready for 2009!

    In the meantime: relax and enjoy your holidays, knowing that you’ll be hearing from us in January.
