In the spring when lettuce and fresh eating greens are abundant, this is our favorite easy-to-make meal. A ‘Big Green Salad’ (B.G.S. for short) is a salad that’s an entire meal.
To make, we fill our plates with dressed lettuce, arugula or another cooking green. Then we pile on vegetable toppings: chopped turnips, radishes, etc. Finally, we add some protein to make it more filling: nuts, chopped cheddar cheese, leftover chopped chicken breast, or canned tuna chunks.
With some buttered bread on the side, we find this to be a delicious and satisfying meal!
