This is an easy soup to make and one of our new favorites. Simply start by sautéing a chopped onion in some butter or oil in a pot. Add good quality stock to the pot along with chopped broccoli. Bring to a boil, and cook until broccoli is soft but still bright green (about 5-7 minutes), then remove soup from heat and carefully puree (in batches in an upright blender or by using a stick blender). Return to heat and add cream/milk and shredded cheese to taste. Be careful not to let soup boil after you’ve added the cream/milk. Salt and pepper to taste.
