Heat a large frying pan over medium high heat. Add olive oil or butter. Swirl and add three stalks chopped green garlic and salt. Cook, stirring, until wilted, about 1 minute.
If you like, add two chopped slices of prosciutto, and cook, stirring, until it loses its bright pink tone, about 1 minute.
Add chopped, washed cooking greens, stir to combine, add 1/4 cup water. Cover, reduce heat to medium low and cook until greens are well wilted, about 3 minutes. Stir, cover, and cook until tender. This will take anywhere from 3 to 8 minutes.
Add salt, pepper, and lemon juice to taste, as you like.
Spaghetti with Green Garlic

Boil 1 pound spaghetti pasta in salted water until al dente, drain and reserve.
While pasta is cooking, heat 1 tablespoon of olive oil in small sauté pan over medium heat. Add one bunch chopped green garlic and 1 scant teaspoon chili flakes, sauté for 2 minutes or until translucent.
Remove from heat and add to pasta. Add 1 cup olive oil and toss to coat. Season to taste with salt and pepper.
