Spring meal ideas

  • Spinach lasagna; buttered & salted radish slices on the side
  • Big Green Salad (BGS) — our favorite easy spring meal: pile all the fresh salad greens you have high on your plate; chop up other veggies for toppings and pile them on top (radishes, kohlrabi, broccoli & grated beets are all yummy!); add some other yummy toppings for variety (sunflower seeds, cheese, cold chopped chicken breast, dried fruit, plain tuna); finish with your favorite dressing (ours is Annie’s Goddess); serve with a slice of Red Fox multigrain bread … a fast vegetable-rich meal!
  • Kale and/or collard greens, cooked and tossed with buttered eggs noodles
  • Open faced beet & greens sandwich: steam beets and sauté the greens with a spring onion. On a piece of hearty bread, layer the greens; top the greens with a layer of sliced beets; and finish with slices of sharp cheddar.
